Carlson @ CO state dinnerFor the first time ever, wines from a Colorado winery were featured at the Inaugural Celebration Dinner of a Colorado Governor.
Two Carlson Vineyards' wines were selected for the Ritter-O’Brien Inaugural Celebration dinner in Denver on January 12, 2007.
The Palisade-based winery’s Cougar Run Chardonnay and Cougar Run Shiraz were served with the dinner’s entree: Beef Wellington. The entree melded the flavors of beef tenderloin and wild mushroom duxelle baked in puff pastry, accompanied by a Cabernet Sauvignon demi-glace and pearl roasted root vegetables.
